Ingredients
  

  • 2 lb beef chuck roast
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 4 hoagie rolls
  • 4 slices provolone cheese (optional)
  • 1 tbsp fresh parsley, chopped (optional garnish)

Instructions
 

  • Pat the chuck roast dry with paper towels. Rub it with olive oil, salt, pepper, garlic powder, and onion powder until the entire roast is evenly coated.
  • Heat a skillet over medium-high heat and sear the roast for about 3–4 minutes per side until browned. This step is optional but adds extra flavor.
  • Place the roast in the slow cooker. In a bowl, mix together the beef broth, Worcestershire sauce, and soy sauce.
  • Pour the broth mixture over the beef in the crockpot.
  • Cover and cook on LOW for about 8 hours, until the beef is very tender and easily shreds with a fork.
  • Remove the roast and let it rest for about 5 minutes. Shred the meat using two forks, then return the shredded beef to the slow cooker so it can soak in the juices.
  • Slice the hoagie rolls open. Add provolone cheese if desired and broil for 1–2 minutes until melted. Pile the shredded beef onto the rolls and serve with small bowls of the slow cooker juices for dipping.

Notes

Let the roast rest a few minutes before shredding to keep it juicy. Use sturdy hoagie or French rolls so they hold up to the dipping sauce. For extra flavor, add sliced onions or bell peppers to the slow cooker while cooking. You can also spread garlic butter on the rolls before broiling for extra richness.
