Ingredients
  

  • 25 chocolate sandwich cookies (like Oreos), crushed
  • 5 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp mint extract
  • 1.5 cups heavy whipping cream
  • 4–5 drops green food coloring
  • 1/2 cup white chocolate chips, melted

  • fresh mint leaves (optional garnish)

Instructions
 

  • Crush the chocolate sandwich cookies using a food processor or by placing them in a sealed bag and crushing with a rolling pin. Mix the crumbs with melted butter until evenly coated. Press the mixture firmly into the bottom and slightly up the sides of a 9-inch pie dish. Refrigerate while preparing the filling.
  • In a mixing bowl, beat the softened cream cheese until smooth and creamy. Add powdered sugar, vanilla extract, and mint extract. Mix until fully combined and silky.
  • Stir the melted white chocolate into the cream cheese mixture until well blended and creamy.
  • In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  • Divide the filling into two bowls. Add green food coloring to one portion and mix until evenly colored. Spoon alternating dollops of white and green filling into the chilled crust, then gently swirl with a knife or skewer to create a marbled shamrock pattern.
  • Refrigerate the pie for at least 4 hours or until fully set. Before serving, garnish with whipped cream, chocolate shavings, sprinkles, or fresh mint if desired. Slice and serve chilled.

Notes

For the smoothest filling, let the cream cheese soften at room temperature for about 30 minutes before mixing. Avoid over-swirling the filling so the green and white layers stay distinct. This pie sets best when chilled overnight. Store covered in the refrigerator for up to 4 days or freeze for up to 2 months, thawing overnight in the fridge before serving.
