Ingredients
  

  • 6 bone-in, skin-on chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/3 cup honey
  • 3 tbsp soy sauce
  • 4 cloves garlic, minced
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp brown sugar
  • 1/2 tsp ground ginger
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp sesame seeds (optional garnish)
  • 2 tbsp chopped green onions (optional garnish)

Instructions
 

  • Preheat the oven to 375°F (190°C). Lightly grease an oven safe skillet or baking dish with olive oil.
  • Pat the chicken thighs dry with paper towels. Season both sides with salt and black pepper. Place the thighs skin side up in the prepared skillet or baking dish, leaving space between each piece.
  • Place the chicken in the oven and roast for about 25 minutes until the skin begins to turn golden and some of the fat renders out.
  • While the chicken roasts, combine honey, soy sauce, minced garlic, vinegar, brown sugar, and ground ginger in a small saucepan. Bring to a gentle simmer over medium heat while stirring.
  • Whisk together cornstarch and water in a small bowl to create a slurry. Slowly pour it into the simmering sauce while whisking and cook for 2 to 3 minutes until the sauce thickens and becomes glossy. Remove from heat.
  • Remove the chicken from the oven after 25 minutes. Spoon about half of the honey garlic sauce over the chicken, coating each piece. Return to the oven and roast for another 15 to 20 minutes. Spoon sauce from the pan over the chicken during the last minutes to build a glaze. Cook until the internal temperature reaches 165°F (74°C).
  • Remove the chicken from the oven and let rest for 5 minutes. Drizzle remaining sauce over the top and garnish with sesame seeds and chopped green onions if desired.

Notes

For extra crispy chicken skin, place the finished chicken under the broiler for 2 to 3 minutes at the end of cooking. Watch carefully so the honey glaze does not burn. This creates a deeper caramelized finish and an even stickier glaze.
