Ingredients
  

  • 10 cups seedless watermelon cubes, frozen for at least 24 hours
  • 2–4 tbsp maple syrup (adjust to taste)
  • 1 juice of 1 large lime
  • 1/4 cup fresh mint leaves or basil (loosely packed, optional)
  • 1 1/2 cups filtered water

Instructions
 

  • Take the frozen watermelon cubes out of the freezer and let them sit at room temperature for about 5–10 minutes so they soften slightly and are easier to blend.
  • Add the watermelon, 2 tablespoons maple syrup, lime juice, mint (or basil), and water to a high-speed blender.
  • Pulse the blender a few times first to break the watermelon into smaller chunks.
  • Blend until the mixture becomes smooth and icy with a thick slushie texture.
  • Taste the slushie and add more maple syrup if you’d like it sweeter. If the mixture is thicker than you prefer, add a small splash of water and blend again.
  • Pour into glasses and serve immediately while the slushie is icy and refreshing.

Notes

Use very ripe watermelon for the sweetest flavor. Freeze the watermelon cubes in a single layer so they blend easily later. If the slushie is too thick, add a splash of water and blend again. If it’s too thin, add more frozen watermelon. This drink is best served immediately while icy and fresh, but leftovers can be frozen and re-blended or turned into popsicles.
