Ingredients
  

  • 3 cups chow mein noodles or crispy rice cereal
  • 1 1/2 cups semi sweet chocolate chips
  • 1 cup butterscotch chips
  • 1 tsp vanilla extract
  • 36 mini candy eggs or chocolate eggs
  • 1 pinch salt (optional)

Instructions
 

  • In a microwave safe bowl, combine the chocolate chips and butterscotch chips. Heat in 20 to 30 second intervals, stirring between each round, until the mixture is completely melted and smooth. Stir in the vanilla extract and a small pinch of salt if using.
  • Place the chow mein noodles or crispy rice cereal in a large bowl. Pour the melted chocolate mixture over the cereal and gently stir until everything is evenly coated while keeping the cereal texture intact.
  • Line a baking sheet with parchment paper. Scoop about two tablespoons of the mixture onto the tray and use the back of a spoon to gently shape each mound into a nest with a small indentation in the center.
  • While the nests are still soft, place three mini candy eggs in the center of each nest and press them lightly so they stay in place.
  • Place the tray in the refrigerator for about 30 minutes or until the chocolate has fully hardened. Once set, carefully lift the nests from the parchment paper and serve.

Notes

Work quickly when shaping the nests because the chocolate mixture begins to firm as it cools. Use parchment paper to prevent sticking and make cleanup easier. Smaller nests look more delicate and are easier to serve. You can customize the recipe by adding peanut butter to the chocolate mixture, using white chocolate for a lighter look, sprinkling shredded coconut for a fluffy nest appearance, or swapping cereal for crushed pretzels for a sweet and salty variation.
