Ingredients
  

  • 1 pound ground beef or sausage
  • 1 can Rotel diced tomatoes with green chilies, undrained
  • 16 ounces processed cheese, cubed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup cream cheese for extra creaminess (optional)
  • 1 diced jalapeƱo for more heat (optional)
  • 1 cup black beans (optional)
  • 1/2 cup cooked corn (optional)

Instructions
 

  • In a large skillet over medium heat, cook the ground beef or sausage until fully browned. Break the meat into crumbles as it cooks, then drain any excess grease.
  • Reduce the heat to low. Add the Rotel tomatoes, cubed cheese, garlic powder, and onion powder directly into the skillet. If using cream cheese or any extra add-ins, stir them in now.
  • Continue stirring gently until the cheese is fully melted and the dip becomes smooth and creamy. This usually takes about 5 to 7 minutes.
  • Transfer the dip to a serving bowl or slow cooker to keep warm. Serve immediately with tortilla chips, crackers, toasted bread, or fresh vegetables.

Notes

Keep the dip warm in a slow cooker for the best creamy texture. Add cream cheese for extra richness or jalapeƱos for more heat. This dip also works well as a topping for nachos, tacos, and baked potatoes. Stir occasionally while serving to keep the cheese smooth.
