Every single year, without fail, my kids start asking about Shamrock Shakes the moment February rolls around. And every year we end up in that McDonald’s drive-thru line that wraps around the building twice, waiting way too long for a shake that’s gone in about four minutes. So a few years back I decided enough was enough, and I figured out how to make them at home. Spoiler alert: it’s so much better, it takes five minutes, and everyone gets one without anyone having to fight over who sits in the middle seat.
The secret is using mint extract, not peppermint extract. This is one of those little details that actually makes a real difference. Peppermint is stronger and sharper and gives you that toothpaste vibe, while mint extract is softer and sweeter, much closer to what you get from McDonald’s. It can be a little harder to find at the grocery store, so check the baking aisle near the vanilla extract. If you truly can’t find it, peppermint works in a pinch, just use a little less than the recipe calls for and taste as you go.
The other thing I’ll say is don’t skimp on the ice cream. Since this is basically a three ingredient recipe, the quality of your vanilla ice cream really matters. Use a brand you actually like eating out of the carton and you’ll have a shake worth bragging about.
Makes 2 shakes | Ready in 5 minutes

What you’ll need:
- 3 cups vanilla ice cream (good quality, don’t skimp!)
- 3/4 cup whole milk (whole milk makes it creamier and thicker)
- 1/2 teaspoon mint extract (not peppermint!)
- 5 to 10 drops green food coloring, depending on how green you want it
- Whipped cream, for topping
- Maraschino cherries, for topping
- Green sprinkles, totally optional but the kids will love it
Here’s what you do:
This could not be simpler. Add your ice cream, milk, mint extract, and food coloring to your blender and blend until smooth and creamy. That’s genuinely it for the shake itself.
Start with 5 drops of food coloring and see how you feel about the color. If you want that classic bright shamrock green, keep adding a drop or two until it looks right to you. The gel food coloring gives a more vibrant color than liquid, so if you have gel on hand, you’ll need a little less.
Pour into tall glasses right away, top with a generous swirl of whipped cream (the canned stuff is perfectly fine here, this is not the moment to be fancy), a cherry on top, and some green sprinkles if your kids are watching over your shoulder and asking for them.
Serve immediately. Shakes are always best the moment they’re made.
A few extra tips:
If your family likes it extra thick, use less milk and add it gradually until you hit the right consistency. If someone prefers it a little thinner and more drinkable, just splash in a bit more milk.
For the adults at the table, a shot of Baileys or crème de menthe blended right in turns this into a very fun St. Patrick’s Day treat after the kids are in bed. Just saying.
Leftovers can be frozen in a sealed container for a month or so, but honestly they’re so fast to make I’d just blend a fresh batch rather than trying to thaw one. The texture is always better fresh out of the blender.
Once you make these at home you’ll never wait in that drive-thru line again. My kids now ask for them year-round, which honestly I’m totally fine with because it takes less time than loading everyone in the car! 🍀
